A properly maintained iron pan can be your favorite pan in the house to cook with. A properly seasoned iron pan has a nice black finish that feels smooth to the touch. To properly season a iron pan you must make sure the iron pan is clean and dust free. Take a oil such as a vegetable oil and put it a soft absorbent cloth like a cotton cloth. Take the cotton cloth that is soaked in oil and cover the entire iron pan. Make sure the entire iron pan is covered including the bottom of the pan and the handle of the iron pan. Put the iron pan in your oven and set the oven at a low temperature like 200 degrees for an hour. Turn off the oven and let the iron pan sit in the oven with the door closed till it cools off.
After the iron pan is cooled off you can take it out of the oven and check how it looks. It should be black and smooth. If it isn't smooth enough for your taste you can repeat the seasoning process. An iron pan will season as it is cooked with.
If you have an iron pan that is very rusty you can take the iron pan and fill it with as much hay as it will hold. Then add water to the brim of the pan and let it boil for several hours. You can replace the water as needed. If there is still some rust that remains you can repeat the process. If there isn't much rust you can take some oil and rub in on the rust. Then wipe the rust with a clean cotton cloth. Keep repeating this until the cotton cloth has no rust on it when it is wiped on the iron pan.
