Preheat your pan before preparing your meal. Water droplets should sizzle, then roll and hop around the pan, when dropped onto the heated surface. If the water disappears immediately after being dropped, the pan is too hot. If water only rests and bubbles in the pan, it is not quite hot enough. NOTE: Do not pour large amounts of cold liquid into your hot skillet. This can cause the cast iron to break. Never forget your potholders! Cast iron pan handles get HOT when cooking!
There is a trick to maintaining cast iron cookware and that trick is known as "seasoning" or "curing." ...
The first most common mistake of why people do not like cast iron is that they say everything sticks. If food sticks to your cast-iron pan, your pan is NOT seasoned right and you need to re-season it. Cast iron is a natural non-stick surface and if your pan is seasoned correctly it WILL NOT stick!
Skillet or Frying Pan: Choose the size most comfortable for you. I recommend the 10-inch one, as it's the best tradeoff of size and weight. Personally, I own 10- and 12-inch models because on occasion, I'm called on to feed large groups of people.

There are several reason that people rave about their cast-iron cookware. Besides being an ideal heat conductor, cast iron heats evenly and consistently, it is inexpensive and will last a lifetime (actually several lifetimes) with proper care, and it is an old-fashioned way to cook fat free. (See Cooking with Cast Iron below on the left.) When well seasoned, a cast-iron pan will be stick resistant and require no additional oil.
The benefits of cast-iron pans are terrific: Foods glide out of it as from no pan made with Teflon; it goes from stove to oven; no special utensils ar...

Overall, this has been a good non-stick cookware addition to my kitchen. It performs well for breakfast items such as eggs, pancakes, and french toast. It also performs well with vegetables such as onions and peppers, without any added oils or fats, which is an essential quality for low calorie cooking. The non-stick performance is pretty good, though while cooking eggs, I did experience a slight amount of sticking. This, however, cleaned up very easily in soapy water.
The 11-inch cooking surface is a good size as it is not too large to fry a single egg, yet can accomodate a larger po...
We’ve gotten a lot of hand me downs from the family basement over the years - furniture, lamps, art, an espresso maker - but our hands down favorite is the cast iron pan. It’s likely that there’s one lying around in your family’s basement or just waiting to be picked up at a stoop sale or online. For a very low price, you’ll have a pan that’s strong, durable, has excellent heat retention, and with the right care, a non-stick surface.
The trick with cast iron cookware is the seasoning process. If you are buying new cast iron products, they are often pre-sea...

Came across these earlier today. I use these pans and, like most of the reviewers, think they are pure quality. They are very heavy weight with a hard anodised finish. My OH doesn’t like the 30cm skillet as it is too heavy for her. Fortunately, this set doesn’t contain the 30cm skillet, so would be perfect for her! These Analon professional sets tend to be on offer every summer sale and Christmas period for around £100 - £120 in John Lewis/Debenhams etc. I think 84 pounds is a steal. * 16, 18 and 20cm saucepans, 20cm skillet plus a free 26cm stir fry * A professional ...
The thing about using a pan on the grill is that it blocks the smokey goodness and char from being placed on veggies, unless you place them directly on the grill. But if the veggies are sliced thinly, like with fajitas style veggies, more goodness can end up in the charcoal along with the veggies that slip through the grill. Not so, if you have a Mesh Fry Pan.
Woven out of heavy gauge stainless-steel wire, the Mesh Fry Pan provides for that yummy seared char without the slippage. And thanks to the tight mesh, the surface area resists sticking, so when using the long handle, grillers c...

TOO many cooks are supposed to spoil the broth... but that certainly wasn't the case when 20 of the UK's top chefs came together in the same kitchen.

CALEDONIA - Milo Leger smiles deeply moments after her athletic feat.
"I’m a gold winner!" she exclaimed, pumping her hands in the air.
She said concentration and focus were the secrets to her success Wednesday as the winner of the ladies frying pan toss in the 44 and older category in Caledonia, Queens County.
Training helps too, she added with a laugh, pointing to her somewhat skimpy biceps.
Tossing a cast iron frying pan is an annual favourite event at Canada Day festivities in this rural inland community. It was Ms. Leger’s first year competing.

A cast iron pan used to be the basic cooking tool of our grandmother's kitchens. Even in my mother's kitchen, cast iron pan were some of the most-used. I grew up using them and didn't think twice about the care they required - I was just thrilled that they didn't show up in the dirty dishes pile to be washed.
After a long absence, cast iron has finally made a return to my own kitchen. The care and feeding of a cast iron pan is slightly more complicated than the care of a modern non-stick pan. The payoff for your extra sixty seconds of attention comes when you don't have to spend money...
